This menu is ready to eat. Chicago Chef Homaro Cantu used to print edible menus and starch-paper pictures of sushi by filling a Canon ip560 printer with organic inks. "I like to think of printing food as adjusting the hue and contrast of picture," he said. "You want more vitamins, you turn it up." To expand the possibilities of printing food, Cantu ditched the Canon and built his own food transmogrifier. The basement kitchen of Cantu's Moto restaurant in Chicago also houses a Class 4 laser and copious amounts of liquid nitrogen.
